Vineyard and terroir
The estate’s vineyards in Emilia are farmed biodynamically.
Vinification
After harvest, the grapes undergo a short skin maceration and spontaneous fermentation with native yeasts, without temperature control. The wine is bottled unfiltered, and primary fermentation restarts in the bottle according to the Ancestral Method.
Serving and pairing
Shake before serving. Suitable as an aperitif and with Italian dishes.
