About this wine
Vineyard and terroir
The vineyards lie in Doganella di Ninfa, in the commune of Cori. The soils are clay, with a pozzolanic subsoil composed of volcanic ash, pumice and tuff. Planting density is 4,000 vines per hectare.
Grapes
The wine is made from the native Malvasia Puntinata variety, also known as Malvasia del Lazio.
Vinification
The grapes are harvested between 25 September and 5 October, then gently pressed. A brief maceration and controlled-temperature fermentation take place in stainless-steel tanks.
Ageing
The wine matures on its fine lees for six months in stainless-steel tanks, with regular bâtonnage.
