About this wine
Vineyard and terroir
The fruit comes from west-facing vineyards at 350 m, where light, limestone-rich soils are threaded with sandy veins and porphyry rock. Warm sunlight is tempered by cool evening breezes descending from the mountains.
Grapes
Gewürztraminer. Cashmere is made only in the best vintages.
Vinification
The grapes are picked in late September and dried for four months in a ventilated space. During drying they lose roughly two-thirds of their original weight, concentrating sugar, aroma, acidity and tannins. The desiccated fruit is pressed in December and fermented in stainless-steel tanks for six weeks. The high sugar concentration prevents fermentation from reaching dryness, leaving substantial natural residual sugar.
Ageing
After fermentation, the wine remains on its lees in stainless steel for almost one year, followed by extended bottle maturation.
Technical data
The 2022 technical data give 10.5% alcohol, 7.8 g/L total acidity and 220.0 g/L residual sugar. The wine is bottled in a 0.375-litre format and has an estimated ageing capacity of 4–10 years.
Tasting profile
Golden yellow with light amber glints. The intense bouquet evokes dried apricot, candied fruit, roses, orange and caramel. The concentrated palate balances inviting sweetness with refreshing acidity, combining juicy structure, complex fullness and elegance.
Serving and pairing
Serve slightly chilled at 12–14 °C. Pair with desserts, foie gras or blue cheeses.
