About this wine

Vineyard and terroir

The Nerello Mascalese grapes are grown in the Sambuca di Sicilia area.

Grapes

Depending on the vintage, the blend may include a small amount of Nero d'Avola.

Vinification

After harvest the grapes are pressed gently to avoid extracting green tannins. Maceration takes place in stainless steel tanks at a controlled temperature for around 10–12 days, with regular pump-overs. Malolactic fermentation is completed before the wine goes to barrel.

Ageing

The wine ages for several months in French and American oak barrels after malolactic fermentation.

Serving and pairing

Decanting for an hour before serving is recommended.
