About this wine
Vineyard and terroir
The fruit comes from Cantine Cellaro's vineyards in Sicily. Organic practices are used in the vineyard, with minimal intervention in natural processes.
Vinification
The grapes are hand-harvested at optimal ripeness, then dried for 7–10 days in the hot Sicilian sun and dry African wind, losing as much as 15–20% of their weight. They are gently pressed and fermented at a controlled temperature, with a long maceration. Organic practices and minimal intervention continue in the cellar.
Ageing
The wine spends 12 months in French oak barriques.
