About this wine
Vineyard and terroir
The grapes come from a small village in the province of Agrigento, on steep hillsides overlooking Lake Arancio. The vineyards lie at 400–500 m above sea level and face southeast. Soils are 90% limestone and 10% clay. The vines are 15 to 20 years old.
Vinification
The grapes are harvested at optimal ripeness and taken to the winery, where they are destemmed and gently crushed. Pressing is extremely gentle, with dry ice in the press, which helps extract aromas and colour from the skins. Fermentation takes place in stainless steel tanks at a controlled 12 °C for 20–25 days, using selected dry yeasts in an extremely reductive environment.
Ageing
The wine ages in stainless steel tanks with regular lees stirring.
Tasting profile
A delicate rosé. The extraction of aromas and colour from the skins gives it its distinctive character.
