About this wine
Vineyard and terroir
The grapes come from vineyards around Zagarolo in Lazio, about 330 metres above sea level. The climate is Mediterranean, with hot summers and good air circulation, which lets the grapes ripen while keeping their acidity and aromatic brightness. The soils are volcanic tuff, which give the wine its distinctive minerality and a lightly salty note and bring more focus to the fruit.
Grapes
Vermentino is a grape with an open, aromatic character, lightly salty freshness and a food-friendly style.
Vinification
After harvest the grapes are chilled as whole bunches, then gently pressed. Fermentation takes place at low temperatures in steel tanks, which preserves the variety's pure fruit and fresh floral aromas.
Ageing
After fermentation the wine spends six months on fine lees with regular bâtonnage. The lees contact and stirring give a smoother, fuller texture, with added softness and depth.
Tasting profile
Fresh, bright and expressive, with juicy fruit flavours, a smooth texture and lively minerality. Fresh floral aromas, and a lightly salty note that focuses the fruit.
Serving and pairing
Suited to an aperitif, and to fish dishes.
