About this wine
Vineyard and terroir
The grapes grow in a carefully tended hillside vineyard in the commune of Santa Paolina, near Avellino. Wild cherry trees and blackberry bushes cover the slopes.
Vinification
The grapes are harvested by hand, sorted on a vibrating table and gently pressed immediately after picking. Fermentation takes place on the skins at low temperatures. The wine is then transferred to another tank for partial clarification and separation from spent yeast and sediment.
Ageing
The wine is stabilized, matured and fully clarified in steel tanks over five months.
