Vineyard and terroir
The grapes grow in Fonzone’s own vineyards on some of the coolest hillside sites in Paternopoli, within the Irpinia DOC area.

The fruit is selected before vinification.
Vinification
The grapes are picked by hand in early October—earlier than in Taurasi—and taken directly to the winery. After pressing and a short maceration, the settled must ferments at a controlled temperature, partly in stainless-steel tanks and partly in used oak barrels.
