About this wine
Vineyard and terroir
The five varieties come from vineyards at 350–800 m, facing south-west. Their varied soils are Dolomitic, porphyritic, sandy and marly.
Grapes
Blend proportions vary by vintage. The current blend comprises Riesling, Chardonnay, Gewürztraminer, Sauvignon Bianco and Kerner, though exact percentages are not specified. Kerner was introduced with the 2013 vintage, while the shares of Riesling and Gewürztraminer were reduced.
Vinification
The varieties ripen at different times and are therefore harvested and processed separately. Chardonnay and Sauvignon Bianco ferment in barriques; Riesling, Gewürztraminer and Kerner ferment in stainless-steel tanks. Once fermentation is complete, the young wines are blended so that their different aromatic components can integrate.
Ageing
The assembled wine remains on its fine lees for approximately ten months. After bottling, it matures for several additional months.
Technical data
Yield: 45–55 hL/ha. Production: 50,000 bottles.
Tasting profile
Manna is golden yellow when young and develops deeper golden tones after several years. Its complex, layered bouquet recalls elderflower, pistachio and rose petals. Concentration and complexity are balanced by soft elegance and a mineral structure. The varieties give the wine a changing character as it evolves, while the substantial Riesling component helps it retain vitality over time.
Serving and pairing
Serve at 14–16 °C. Its breadth and structure suit refined dishes, particularly Japanese cuisine, sushi and sashimi.
Vintage notes
Kerner joined the blend in 2013, accompanied by reductions in the proportions of Riesling and Gewürztraminer.
