Vineyard and terroir
Sauvignon Bianco is Guyot-trained in vineyards between 400 and 800 m. The south- and south-west-facing soils derive from Dolomite erosion.
Grapes
Sauvignon Bianco.
Vinification
The crushed grapes macerate overnight at low temperature before gentle pressing. Part of the must ferments in stainless-steel tanks and the remainder in barriques.
Ageing
The two components mature for approximately eight months on their fine lees in the same stainless-steel tanks and barriques used for fermentation.
Technical data
The wine page gives a yield of 50 hL/ha, production of 7,000–10,000 bottles and a serving temperature of 12–14 °C. The linked technical sheet instead gives 60 hL/ha, 5,000 bottles and 10–12 °C.
Tasting profile
Pale straw yellow with green highlights. The varied bouquet features elderflower, white peach, complex dried-fruit notes and aromas reminiscent of Eastern spices. The palate combines lively, savoury acidity with mineral notes. The finish is persistent and stimulating, with pleasing fullness and elegance.
Serving and pairing
Pair with tuna tartare, vitello tonnato, white meats or mildly spiced Asian dishes. Its profile also lends itself to experimentation with ingredients from a range of culinary traditions.
