About this wine
Vineyard and terroir
The fruit comes from several plots in Contrada Graffetta near Ispica, Sicily. The 4 ha of south-facing vineyards lie at an average elevation of 40 m a.s.l. Their fertile soils are rich in marine limestone. The vines are eight years old and planted at 6,500 vines/ha, with an average yield of 1 kg per plant. Training combines spur pruning and cane pruning.
The climate is warm, dry and windy, while proximity to the sea moderates temperatures. Abundant sunlight allows the international varieties to ripen slowly and fully, supporting structure and extraction.
Grapes
30% Cabernet Sauvignon, 30% Cabernet Franc, 20% Syrah and 20% Petit Verdot. Terre Siciliane IGT.
Vinification
Harvest extends from late September to mid-October. Maceration lasts 10–12 days at approximately 28°C. Malolactic fermentation takes place in stainless steel.
Ageing
The wine matures for six months in tonneaux, followed by a further six months in bottle.
Technical data
Annual production is approximately 50,000 bottles.
Tasting profile
Intense, dense colour. Aromas of ripe red fruit are complemented by leather nuances. The palate is full-bodied and velvety, leading to a soft, juicy finish.
Serving and pairing
Serve at 16°C with grilled meat or mature cheeses.
