About this wine
Vineyard and terroir
Ràpio is a small project based on a 2 ha vineyard in Contrada Altarello. The site combines poor, hilly ground rich in rock fragments and surface rocks with marine ventilation. It lies at an average elevation of 600 m and has east/west exposure. The 12-year-old vines are planted at 5,000 vines/ha, trained to Guyot and yield an average of 1.0 kg per vine.
Grapes
100% Cataratto.
Vinification
Harvest takes place during the first half of September. Fermentation lasts 10–12 days at approximately 18°C. Malolactic fermentation occurs in stainless steel.
Ageing
The wine matures in stainless steel and receives at least three months of bottle ageing.
Technical data
IGT Terre Siciliane. Annual production is approximately 12,000 bottles.
Tasting profile
Straw yellow. The aromatic profile emphasizes freshness, minerality and savoriness. The palate combines freshness with Mediterranean warmth.
Serving and pairing
Serve at 8–10°C. Pair with fish, shellfish or pasta with Mediterranean sauces.
