About this wine
Vineyard and terroir
The wine comes from a 4 ha vineyard at Località Segesta, managed through collaborations involving the estate’s vineyard operations. The site lies at approximately 600 m and is suited to white varieties such as Grillo. Its hilly soil is rich in rock fragments, with rocks visible at the surface. The 12-year-old vines have east/west exposure, a density of 6,500 vines/ha and spur pruning. Average yield is 1.2 kg per vine.
Grapes
100% Grillo.
Vinification
The grapes are harvested during the first half of September. Fermentation proceeds at approximately 18°C for 10–12 days. Malolactic fermentation takes place in stainless steel.
Ageing
The wine matures in stainless steel and receives at least three months of bottle ageing.
Technical data
Sicilia DOC. Annual production is approximately 12,000 bottles.
Tasting profile
Straw yellow. The delicate yet complex nose offers dried flowers, hay and straw. Mediterranean warmth shapes the palate, balanced by freshness derived from pronounced acidity.
Serving and pairing
Serve at 8–10°C. Pair with fish, shellfish or pasta dressed with Mediterranean sauces.
