About this wine

Vineyard and terroir

The fruit comes from a small, organically farmed plot in the municipality of Ginestra, at 580 metres above sea level. The vineyard has rich volcanic soils, a planting density of 8,000 vines per hectare and vines aged between 60 and 70 years.

Vinification

The grapes are harvested by hand into small crates and undergo an initial selection in the vineyard. They reach the winery within a few hours and are sorted again with a linear debris-removal system, selecting intact berries at ideal phenolic ripeness. The fruit is gently destemmed and softly pressed. Fermentation takes place in a 5,500-litre Slavonian oak cask at no more than 28 °C, with maceration lasting up to 60 days. Malolactic fermentation follows.

Ageing

The wine matures in Slavonian oak casks for 12–18 months, followed by at least 12 months in bottle in the winery’s cellars.
