About this wine

Vineyard and terroir

The organically farmed vineyards lie in the municipality of Maschito at an altitude of 580 metres. Planting density is 8,000 vines per hectare, and the vines are 60–70 years old.

Vinification

The grapes are harvested by hand into small crates and selected first in the vineyard. Within a few hours, they reach the winery, where they undergo a second selection using a linear particle-removal system to retain intact berries at ideal phenolic ripeness. The fruit is gently destemmed and softly pressed. Fermentation takes place at no more than 28 °C in a 5,500-litre Slavonian oak cask, with maceration lasting up to 60 days. Malolactic fermentation follows.

Ageing

The wine matures in Slavonian oak casks for 12–18 months, followed by at least 12 months in bottle in the winery’s cellars.
