About this wine
Vineyard and terroir
The fruit comes from 35 estate vineyards around Bardolino and Cavaion. The soils are stony and formed from glacial moraines, with sandy-silty subsoils rich in magnesium. Lake Garda, the Alpine meadows and the Mediterranean Sea influence the grapes’ aromatic character. The vines average 26 years of age and are organically farmed according to environmental principles.
Grapes
Corvina leads the blend, contributing fruit, bright fruit-and-berry aromas and gentle spice. Rondinella adds structure and emphasizes Corvina’s spice, while the remaining varieties contribute aromatic nuances and balance.
Vinification
Depending on the vineyard and vine age, the grapes are harvested by hand or mechanically. Fruit from each vineyard is crushed within ten minutes of picking to preserve its fresh character. Only free-run juice is used. Alcoholic and malolactic fermentation take place in temperature-controlled stainless-steel tanks at 20–28 °C for 5–7 days.
Ageing
The wine matures for 3–12 months in temperature-controlled stainless-steel and concrete vessels. The porosity of the concrete allows micro-oxygenation without imparting woody aromas.
