About this wine
Vineyard and terroir
The grapes grow in the hills of the Bosco Faiano vineyard, on clay-limestone soils at 350 metres above sea level.
Grapes
Aglianico makes up 50% of the blend; the rest is Merlot, Montepulciano, Cabernet Sauvignon and Sangiovese. Distinctive clones are used.
Vinification
The grapes are harvested by hand after a strict selection of only high-quality bunches. Merlot and Sangiovese are picked in late September, when the berries are slightly overripe. Aglianico is picked in late October. At the winery the bunches are sorted and the grapes destemmed. The must ferments in temperature-controlled stainless steel tanks for 15–20 days.
Ageing
The wine ages for 12–18 months in oak barrels of 250 to 2500 litres. After bottling it matures a further 6–8 months in the winery's cellars.
Label / history
"Eme" comes from the Greek word for "blood". The wine is dedicated to people who know what true passion means. I Capitani is a family-owned winery.
