About this wine
Vineyard and terroir
The vines were planted in 2018 at 150 metres above sea level on southeast-facing slopes. Their resistance to fungal diseases makes cultivation without chemicals or soil contamination easier and substantially reduces the need for plant-protection treatments.
Grapes
The variety is a cross between Sauvignon Blanc and Kozma 2-3. PIWI is a German abbreviation referring to grape varieties resistant to fungal diseases.
Vinification
The wine is produced organically. The grapes are harvested in the second or third week of August, then destemmed and gently pressed. The must is clarified at a low temperature and fermented at 14–15 °C.
Ageing
After fermentation, the wine is racked and held at 10 °C until bottling. Stabilization takes place before bottling.
