About this wine

Vineyard and terroir

The fruit comes from the “San Sebastiano” vineyard in Monforte d’Alba. The vines were planted in 2014 on clay soils.

Vinification

The grapes are harvested by hand into crates, with each variety vinified separately. They are destemmed and gently pressed without maceration, then fermented in temperature-controlled stainless-steel tanks and undergo malolactic fermentation.

Ageing

The separate wines rest on their fine lees in stainless steel for five months. They are blended approximately two months before bottling.

Label / history

The name refers to a legend concerning a document reportedly issued in 400 by Count Alfieri di Magliano, strictly forbidding his vassals from eating hedgehogs, called “cyrogrilli” in the text. A hedgehog appears on the label. Production of the 2022 vintage totalled 4,000 bottles.
