About this wine
Grapes
Corvina, Corvinone and Rondinella.
Vinification
The grapes are harvested by hand in late September, with selection focused on the finest bunches receiving the best sun exposure. They are dried in crates for approximately four months according to the traditional method. The loss of water reduces their weight by around 40%, concentrating both aromas and sugars.
In mid-January, the dried grapes are destemmed and crushed. Fermentation starts at 5–6°C and gradually reaches 18–20°C in its final phase. Maceration lasts approximately 30 days, with daily délestage and pump-overs.
Ageing
The wine matures for 60 months in French oak barriques and tonneaux, followed by 66 months in used wood. A further 6 months of bottle ageing completes the process.
Technical data
Amarone della Valpolicella Riserva DOC from the 2007 vintage. Alcohol is 15.5% vol. This release is presented in a 1.5 L magnum. It contains sulphites and is produced in Italy.
Tasting profile
Intense garnet red. The bouquet combines ripe fruit and sweet spices, ending with an elegant tobacco note. The palate is velvety and harmonious, full and rounded while retaining a vivid, energetic core.
Serving and pairing
Serve at 14–16°C. Its mature character suits substantial dishes from the Italian tradition, including braised meats and roast game. The wine may also be enjoyed alone as a meditation wine.
