About this wine
Vineyard and terroir
The fruit comes from a 5.5 ha vineyard in Tuscany with clay-limestone soils. The vines are 17–20 years old and are farmed organically.
Vinification
The grapes are harvested by hand at optimal ripeness and macerated for two hours. Fermentation begins spontaneously with natural yeasts. Organic cellar practices and minimal intervention are employed throughout. The wine is bottled without filtration or fining, and no sulfites are added.
Ageing
The wine ages partly in stainless-steel tanks and partly in old barriques, spending at least 12 months on the lees.
Label / history
The wine is made by Domaine de' Cocci Rotti, a winery owned by the La Ginestra cooperative.
