Vineyard and terroir
The fruit comes from a single plot.
Vinification
The grapes are harvested by hand in October. Fermentation on the lees lasts two weeks, followed by three weeks of temperature-controlled maceration.
Ageing
The wine matures for 36 months in a single 39 hl French oak cask, then rests for a further six months in bottle.
Tasting profile
The palate is rich.
Serving and pairing
Pairs with game, particularly venison, as well as lamb.
Label / history
The label depicts a cheerful group of roosters playing musical instruments. It playfully references the wine’s origin and the rooster’s long-standing role as the symbol of Chianti Classico.
