About this wine
Vineyard and terroir
The grapes grow in Barberino Val d'Elsa at 320 metres above sea level. The vines were planted in 1986 on mainly sandy-clay soils of alluvial origin. The winery works exclusively with organic and biodynamic practices.
Grapes
Selected Chardonnay and Pinot Grigio.
Vinification
The grapes are harvested by hand at the end of August. The Pinot Grigio is gently pressed, and the must is left overnight to settle in a stainless steel vat. After decanting, it serves as a pied de cuve. The Chardonnay must, which has had its own gentle pressing, overnight decanting and further settling, is added to it. Fermentation with naturally occurring local yeasts and malolactic fermentation both take place in stainless steel vats. No selected yeasts, enzymes, tannins, animal proteins or synthetic products are used, apart from the necessary sulfur dioxide.
Ageing
The wine ages for 7–8 months in stainless steel tanks.
Tasting profile
Very fresh, concentrated and aromatic.
