About this wine
Vineyard and terroir
The grapes grow in vineyards around Barberino Val d'Elsa, at 250 metres above sea level. The vines are 40 years old.
Grapes
The Sangiovese, Canaiolo and Trebbiano grapes are selected.
Vinification
Harvest is entirely by hand, when the grapes reach optimal ripeness, usually in early September. Fermentation is spontaneous, in stainless steel tanks without temperature control. The wine is made with 20% whole clusters. Maceration on the skins lasts 10 days, with manual punch-downs.
Ageing
The wine ages for 9 months in stainless steel and concrete tanks, followed by a further 8 months in bottle.
