About this wine
Vineyard and terroir
The Grillo vines grow in Contrada Samperi, Marsala, on limestone and sandy loam soils. They are more than 30 years old, trained to single Guyot and yield no more than 6 tonnes per hectare. The growers minimise human intervention and avoid chemical, physical and mechanical treatments.
Vinification
The grapes are harvested by hand between the second and third weeks of August, placed in small baskets and selected bunch by bunch. They are chilled at the winery, then gently pressed as whole bunches. After natural settling, the must ferments in temperature-controlled stainless-steel tanks. During fermentation, 20% is transferred to French oak barrels to complete fermentation. Secondary fermentation takes place in the bottle by the traditional method, with no dosage.
Ageing
The wine rests on its lees in bottle for at least 18 months.
Label / history
“Terzavia” means “third way”, referring to the combination of French tradition and Sicilian character.
