Vineyard and terroir
The estate’s Zibibbo vineyards extend over 5 hectares of volcanic soil on Pantelleria.
Vinification
For the 2007 vintage, half of the grapes were harvested between mid-August and the first week of September, then sun-dried for at least four weeks on special mats sheltered by solid volcanic-stone walls. The remaining fruit was left on the vines to ripen until October. The two batches were combined during fermentation and macerated for approximately three months, until the intended balance between alcohol and residual sugar was reached. The finished wine contains 140 g/l of sugar.
Ageing
The wine matured for 42 months in French barrels, followed by 6 months in stainless-steel tanks.
Label / history
The Arabic word “bukkuram” means “father of the vineyard.” Arabs used the name for Pantelleria, which they considered a favoured place for cultivating Zibibbo.
