About this wine
Vinification
The red grapes are vinified in the white-wine style. Fermentation is entirely spontaneous, and no sulfites are used. After the base wine is bottled with tirage liqueur, secondary fermentation takes place in the bottle according to the traditional method. Riddling follows after six months, with disgorgement at a later stage.
Ageing
The base wine rests in tanks for around eight months before bottling.

Refreshing and elegant, the wine combines power and freshness with muscularity and liveliness.
Label / history
The label depicts a piano whose 88 keys—52 white and 36 black—inspired the wine’s name. The white keys represent notes, while the black keys represent the intervals between them; together, they can create any symphony.
