About this wine
Vineyard and terroir
The grapes are grown organically near Sammichele di Bari in Central Apulia, inland from the Adriatic Sea. The vineyards stand at 280 m on the Altopiano delle Murge, also known as Murgia. Stony limestone soils contribute characteristic acidity and minerality. The grapes are harvested by hand.
Vinification
Whole bunches undergo carbonic maceration in tank for 15 days. They are then pressed, and the wine is transferred to a steel tank. It is bottled without fining or filtration, with no added sulfur.
Ageing
The wine rests in a steel tank for six months.

Label / history
The wine belongs to the experimental vini cattivissimi collection. Its full name, “Running a business with nature can never be 100% correctly predicted,” recalls advice given to project founder Opi by his former boss after Opi had to postpone his return to the United States. The phrase expresses the idea that natural processes follow their own timing and cannot be predicted completely, regardless of calculations and plans.
