About this wine
Vineyard and terroir
The Sangiovese comes from the San Pietro and Poggiarso vineyards. The vines were planted between 2000 and 2010, are Guyot trained and stand at a density of 5,000 plants per hectare. Yield is approximately 45 quintals of grapes per hectare.
Grapes
100% Sangiovese. The cuvée is conceived beyond the idea of a single vintage.
Vinification
Harvest takes place at the end of August. The grapes are cooled and gently pressed immediately. After two to three days of settling, the first fermentation proceeds at no more than 15°C. The rosé base wine then undergoes its second fermentation in bottle.
Ageing
The wine remains in contact with selected yeasts for 170 months. During this exceptionally long period, the yeasts absorb the rosé colour and the wine develops an intense yellow-gold hue. It is disgorged without dosage.
Tasting profile
The complex bouquet combines pine nuts, coffee and apricot with raisins, honey, chamomile, vanilla and orange peel. Fine, continuous bubbles frame a balanced, creamy and structured palate, followed by a fresh, persistent finish. The colour shows luminous golden tones.
