About this wine
Vineyard and terroir
Sangiovese comes from Poggiarso, at 450–500 metres, and San Piero, at 340–360 metres. The soils contain alberese and sandstone.
Grapes
100% Sangiovese, interpreted as a traditional-method rosé sparkling wine.
Vinification
The grapes are harvested in late August, chilled and immediately subjected to gentle pressing. After two to three days of settling, the first fermentation proceeds at no more than 15°C. The rosé then undergoes its second fermentation in bottle.
Ageing
The wine remains in contact with selected yeasts for at least three years. It is then disgorged, receives liqueur d’expédition and is released ready to drink.
Tasting profile
Pale pink, with a fine, persistent perlage. The complex nose combines peach, bread crust and yeast. The palate is fresh and retains Sangiovese's characteristically lively acidity.
Serving and pairing
Serve at 8–10°C. Pair with fish and seafood dishes, cured meats or mature cheeses.
