About this wine

Vineyard and terroir

The grapes come from the “Baron Ugo” vineyard, at an altitude of 570 metres. The vines are 39 years old.

Grapes

Sangiovese is supplemented by small amounts of Colorino and Canaiolo.

Vinification

The must ferments spontaneously in cement tanks, without added yeast or temperature control. It macerates on the lees for 30–35 days, with daily manual pump-overs. After alcoholic fermentation, malolactic fermentation also begins spontaneously without added yeast.

Ageing

The wine matures for 36 months in French oak barrels and a further 3 months in cement tanks. It is bottled unfiltered, usually in autumn and always during the waning moon, then rests in the cellar for another 6 months before release.
