About this wine
Vineyard and terroir
Morisfarms’ vineyards cover 70 hectares in Maremma, on Tuscany’s Mediterranean coast, and have mineral-rich clay soils.
Grapes
The three-variety blend is led by Sangiovese.
Vinification
The grapes are harvested in the first half of September. Maceration lasts 25 days, with fermentation in temperature-controlled cement tanks. Malolactic fermentation takes place in 225-litre barriques.
Ageing
The wine ages for one year in oak barrels, followed by at least one further year in bottle before release.
Tasting profile
Serious and powerful, the wine becomes softer and more refined with age.
Serving and pairing
Decant for a couple of hours before serving.

Avvoltore was one of Maremma’s first Super Tuscans.
