About this wine

Vineyard and terroir

The vineyards occupy east- and south-east-facing sites in Nalles at 330–400 metres above sea level. Their soil is a 150-metre-deep alluvial fan formed by the Sirmian and Nalles streams, comprising 70% limestone gravel and 30% porphyry rubble. The climate ranges from continental to sub-Mediterranean, with warm days and cool nights. The local Venti di Caduta winds can produce abrupt temperature swings of as much as 20 °C.

Grapes

100% Sauvignon Blanc.

Vinification

The grapes are harvested by hand and undergo a brief pre-fermentation maceration. The clarified must then ferments for approximately three weeks in 12 and 30 hl wooden barrels.

Ageing

The young wine matures on its lees for a further eight months.

Tasting profile

Intense straw yellow with considerable colour depth. The nose combines cut grass, citrus and lemon peel with aromatic herbs. The palate is crisp, taut and saline, leading to a persistent finish.

Serving and pairing

Serve at 10–12 °C with squash risotto or pasta with pesto. Store in a cool place at 10–13 °C with at least 60% humidity.
