About this wine

Vineyard and terroir

CAB comes from Mongibello delle Mandorlaie in Maremma, 8 km from the sea and within the Morellino di Scansano area. The vineyard lies at 250 metres. Sandy soils contain granite, schist and volcanic layers.

Grapes

100% Cabernet Sauvignon.

Vinification

Natural fermentation takes place in stainless-steel tanks. Regular punch-downs and open pump-overs are carried out over two weeks.

Ageing

The wine matures for 16 months in 500 L barrels: 10% new Austrian oak, 60% second-use French oak and 30% third-use French oak. The 2023 vintage was bottled in December 2025.

Technical data

The 2023 wine has 13.5% alcohol, total acidity of 5.76 g/L and pH 3.40. The vineyard is planted at 6,700 vines per hectare and yields 30 hl/ha.

Tasting profile

The 2023 wine is dark ruby red, with ripe plum, dark berries, violet, liquorice and understated spice. It is medium-bodied and balanced, with fine-grained tannins and a long finish. The broader profile emphasizes freshness, structure and ageing capacity.

Serving and pairing

Serve at approximately 18°C. Pair with red meat or game, especially pappardelle with wild boar or grilled beef. Cellaring potential is up to ten years.

Vintage notes

A rainy spring in 2023 was followed by warm summer weather and favourable harvest conditions in September and October. Careful vineyard management limited mildew damage. The vintage produced classically styled wines with relatively moderate alcohol, medium structure and persistent flavour. Harvest ran from September 25–29.

Label / history

The name refers both to Cabernet Sauvignon and to the Latin expression “Caelum ad Beata,” translated as “towards the blessed sky.”
