About this wine

Vineyard and terroir

Ruberpan is the Selezione Vigna Garzon from Monte Garzon at Cellore d’Illasi. The south-facing vineyard lies at 300–500 metres above sea level on pink limestone rich in clay and chalk. Planted in 2000, it is Guyot trained at 5,800 vines per hectare, with six to eight buds per vine. Certified-organic production yields 40–50 hl/ha, or 1–1.5 kg per vine.

Grapes

60% Corvina Veronese, 30% Corvinone, 5% Rondinella and 5% Croatina Veronese.

Vinification

The grapes are harvested by hand between 1 and 20 October, then destemmed and crushed. Fermentation takes place at 23–24°C with 12 days of maceration and regular punch-downs for gentle extraction of colour and tannins. Malolactic fermentation is not carried out.

Ageing

The wine matures for 18–24 months in French oak tonneaux, 40–50% of which are first-use barrels, followed by several months in bottle before release.

Technical data

Alcohol: 14% vol. Total acidity: 5.85 g/L. pH: 3.36.

Tasting profile

Brilliant ruby red. Cherry, small red fruits, redcurrant jam and red roses lead the bouquet, followed by black pepper, cinnamon, juniper berries and cloves. Dark chocolate, vanilla, aromatic woods and a distinct balsamic character add complexity. The palate is enveloping, fresh and savoury, with clear fruit and a delicate tannic texture.

Serving and pairing

Serve at 14–16°C. Pair with Bolognese lasagne, stuffed pasta with game or wild-boar ragù, spaghetti with tomato sauce, roast poultry, grilled meat, game birds, mature cheeses and mostarda.

Label / history

First harvested in 2003, Ruberpan takes its name from the Latin “ruber,” referring to ruby red, and “Pan,” linked to the Pieropan family name.
