About this wine
Vineyard and terroir
The grapes grow in the Buonivini vineyard in the Noto area, at 60 metres above sea level. The soils are limestone-rich, with abundant small stones and some clay. The vineyard is planted at 4,500 vines per hectare, with a yield of approximately 1.1 kg per vine.
Vinification
For the 2011 vintage, the grapes were harvested in mid-August and dried for about 40 days in a ventilated room maintained at 23 °C and 70% relative humidity. Fermentation proceeded slowly in steel tanks at 15 °C for 40 days. The wine was bottled in the first half of March.
