About this wine

Vineyard and terroir

The grapes come primarily from west-facing vineyards that receive the warmth of the afternoon and evening sun. The Ponente west wind disperses accumulated heat, supporting slow ripening. The vineyards and cellar follow certified-organic practices, without synthetic fertilizers or pesticides.

Grapes

33% Sangiovese, 33% Cabernet Sauvignon and 33% Merlot. Cabernet Sauvignon supplies power and tannic structure, Merlot brings fruit, softness and body, while Sangiovese preserves the Tuscan and Chianti character of the blend.

Vinification

The grapes are selectively harvested by hand from mid-September to early October. Fermentation takes place in stainless-steel tanks, followed by approximately 20 days of maceration.

Ageing

The wine matures for 18 months in second-fill barriques, adding depth while retaining the fruit character. Bottling takes place in October.

Technical data

IGT Rosso Toscana. Certified organic. The 2022 current release has 14.5% alcohol, with production of approximately 8,800 bottles.

Tasting profile

Dense yet refined, with intense fresh cassis and ripe-plum fruit accompanied by balsamic accents. The palate has supple but clearly present tannins and culminates in a powerful, persistent finish.

Serving and pairing

Serve at 16–18°C. Pair with main courses based on dark meat, including beef, lamb or venison, as well as rich sauces and Mediterranean dishes. Recommended drinking window: now through 2032.

Label / history

PONENTE means the west or west wind—literally, “where the sun lays down.” The name refers both to the vineyards’ orientation and to the cooling wind that influences their growing conditions.
