About this wine

Vineyard and terroir

The 3 ha vineyard lies in the hills around Gaiole in Chianti in central Tuscany, at an average elevation of 450 m with eastern exposure. Its deep, medium-textured soil is rich in sand and limestone fragments. The five-year-old vines are planted at 5,000 vines per hectare and cane-pruned. Average yield is 1.8 kg per vine. The hilly site gives the wine its mineral and savoury character.

Grapes

100% Malvasia Toscana. The variety is more commonly associated with passito production or blends, but here it is vinified on its own.

Vinification

Harvest takes place in mid-September. The grapes undergo 12 hours of cold skin maceration in the press, followed by gentle pressing and clarification. Fermentation takes place in stainless steel.

Ageing

Two months in stainless steel.

Tasting profile

Deep straw yellow with yellow-green reflections that gradually lose their green cast with time. The fresh, floral and fruity nose recalls hawthorn, peach blossom, green apple and white peach, with subtle notes of acacia honey and broom. The palate is rounded, pleasant and balanced, showing the gently sweet and lightly aromatic character of Malvasia Toscana. Minerality and savouriness extend the finish.

Serving and pairing

Serve at 8–10°C. Suitable as an aperitif or with steamed and salt-baked fish, white meats prepared without tomato, and lemon chicken breast.
