About this wine

Vineyard and terroir

The 3 ha vineyard is described as occupying the hills of central Tuscany around Gaiole in Chianti. Its deep, generous, medium-textured soil contains abundant sand and limestone fragments. The five-year-old vines face east at an average altitude of 450 m a.s.l. Planting density is 5,000 vines per hectare, with an average yield of 1.8 kg per vine. The vines are cane-pruned.

Grapes

100% Malvasia Toscana. This Tuscan variety, commonly associated with passito production or blended wines, is vinified here as a varietal wine.

Vinification

Harvest takes place in mid-September. The grapes undergo 12 hours of cold skin maceration in the press, followed by gentle pressing and clarification. The fermentation entry describes two months in stainless steel and also refers to bottle.

Two months in stainless steel.

Tasting profile

Intense straw yellow with yellow-green tones that gradually lose their green cast. The fresh, floral and fruity nose evokes hawthorn, peach blossom, green apple and white peach, with lighter notes of acacia honey, broom and undergrowth. The palate is balanced and gently rounded, showing Malvasia’s sweet, faintly aromatic character alongside minerality and savoury persistence.

Serving and pairing

Serve at 8–10°C as an aperitif or with steamed or salted fish. It also pairs with white meats prepared without tomato, especially lemon chicken breast.
