Vineyard and terroir
The vines are 20 years old and grow in Salento, where plentiful sunny days bring the grapes to optimal ripeness.
Vinification
The grapes are harvested in early September. Fermentation takes place under strict temperature control at 18 °C to preserve the fresh fruit character of Chardonnay.
Ageing
The wine is aged for 5 months in oak barrels, which give it richness, a creamy texture and spicy hints of vanilla.
