About this wine
Vineyard and terroir
The Sangiovese grows at 300 m on the north-east slope of the Montalcino hill. The medium-textured soils contain clay and marine fossils, with alberese in the highest areas. Older vines are spur-cordon trained, while newer parcels use double Guyot. The vineyards follow organic-farming principles, with mating disruption against grapevine moth and the use of organic humus, cover crops, and green manure to improve soil structure and organic matter.
Grapes
100% Sangiovese Brunello.
Vinification
The grapes are hand-harvested in small crates during the first week of September. After gentle pressing, the must is cooled to 10°C and fermented at 16–20°C. A second fermentation takes place in bottle following the addition of yeasts and sugars. The wine is neither filtered nor disgorged.
