About this wine
Vinification
After harvest, the grapes are gently pressed and the must is carefully drained. Fermentation takes place under closely controlled temperatures to preserve its distinctive bouquet.
Ageing
The wine rests in the winery’s cellars throughout the winter, followed by further maturation in bottle.

Label / history
The name “Pignocco” recalls the tall, round-crowned pine trees beside a small Baroque church that once stood among vineyards on a gently sunlit hill west of Castello di Barbara. Local people called these trees “Pignocco.” Santa Barbara adopted the name for a range comprising white wine, red wine and grappa.
