About this wine
Vineyard and terroir
The vineyards have limestone- and clay-based soils. Maritime and mountain microclimates together help the grapes ripen evenly and give the wine its expressive character.
Vinification
The grapes are harvested by hand, with careful selection of ripe bunches, and then gently pressed to preserve their natural structure. Fermentation takes place in stainless steel tanks at controlled low temperatures, which helps retain the pure character of the variety.
Ageing
The wine rests on fine lees for around six months to develop and stabilise its structure.
