About this wine

Vineyard and terroir

The grapes come from Vigna dell’Avvoltore on Poggio dell’Avvoltore in Massa Marittima. The vineyard occupies the estate’s emblematic hill, a south-west-facing slope at 80–100 m above sea level. It lies about 7 km from the Tyrrhenian Sea, where hot days, prolonged sunlight and cool evenings shape the growing season. The vineyard is described in different parts of the presentation as clay-limestone, rich and loamy with slight acidity, and as a mineral-rich limestone slope within the Metalliferous Hills.

Grapes

A blend of Sangiovese, Cabernet Sauvignon and Syrah. Indigenous Sangiovese is combined with the two international varieties, all grown on Avvoltore Hill.

Vinification

Harvest runs from the second week of September until mid-October. Fermentation takes place in temperature-controlled cement tanks. The cap is pumped over twice daily during the first 10 days, followed by another 15 days of skin contact. After racking, the wine is transferred immediately to oak barrels for malolactic fermentation.

Ageing

Approximately one year in 225 L oak barrels, of which 80% are new, followed by six months of bottle refinement before release.

Technical data

Yield: 3,500 kg/ha.

Tasting profile

Ruby red with purple highlights. The bouquet combines ripe fruit with vanilla nuances. Full-bodied and soft on the palate, with a velvety texture.

Serving and pairing

Serve at 18°C with tomato-based meat roasts or aged cheeses.

Label / history

Avvoltore is the flagship wine created by Adolfo Parentini. Its name is a local dialect term for a bird of prey frequently seen circling the estate’s prominent Avvoltore Hill.
