About this wine
Vineyard and terroir
Pinot Nero and Chardonnay come from vineyards in Alta Langa, with a preference for high-altitude sites.
Grapes
Pinot Nero and Chardonnay.
Vinification
The grapes are harvested by hand into crates and gently pressed. Fermentation proceeds at controlled temperature. The two varieties then remain on their fermentation lees in stainless steel until the following spring. Tirage is followed by secondary fermentation and maturation in bottle, then riddling and disgorgement. The finished wine is Pas Dosé.
Ageing
At least 30 months on the lees in bottle at 15°C, followed by several further months of bottle maturation before release.
Technical data
Alta Langa DOCG. Alcohol: 12.50% vol. Residual sugar: 1 g/L ± 1. Bottle format: 750 ml.
Tasting profile
Straw yellow, with a fine, persistent perlage. The bouquet combines pronounced honey and citrus with bread-crust notes. The palate is complex and long, with mineral accents, a creamy texture and a persistent finish.
Serving and pairing
Serve at 8–10°C. Pair with raw fish, tartare, lightly fried fish, creamy risottos, tajarin with butter and sage or mushrooms, vitello tonnato and battered vegetables. It can accompany an entire modern Piedmontese meal and also suits soft cow’s-milk cheeses, tomini and fresh goat cheeses.
