About this wine

Vineyard and terroir

Chardonnay and Pinot Noir come from Alta Langa vineyards in Monforte d’Alba, Novello and Monchiero. The moderately fertile marly and calcareous-clay soils lie on hillsides beginning at 250 metres above sea level. The vines are Guyot-trained at a minimum density of 4,000 plants per hectare, with yields limited to 11 tonnes per hectare.

Chardonnay and Pinot Noir.

Vinification

The grapes are harvested entirely by hand during the second half of August and placed in 15–18 kg boxes. Whole clusters are gently pressed, and only the first fractions of must are used. Fermentation lasts 10–15 days in stainless-steel tanks at a controlled 18°C. The base wine then stays on its lees at low temperature until the following spring.

Ageing

Spring tirage initiates secondary fermentation in bottle at low temperature. The wine spends at least 30 months on the lees before remuage and disgorgement. The product page records October 2022 as the disgorgement date.

Technical data

Minimum alcohol is 11.5% vol.; minimum total acidity is 5.0 g/L and minimum net dry extract is 15 g/L. Available in 750 ml and 1.5 L formats.

Tasting profile

Straw yellow with golden reflections and a creamy, fine and evanescent mousse. White-peach fruit is accompanied by toasted notes, dried fruit and bread crust. The palate is distinctly creamy, broad and enveloping, finishing with a persistent, savoury, balanced and pleasant aftertaste.

Serving and pairing

Serve at 6–8°C. Suitable for Piedmontese starters and first or main courses, vegetable flan, fondue, tajarin with white truffle, grilled fish and vegetables, fritto misto, cheeses with preserves, finger food, sushi and sashimi. Store horizontally in a cool, dry and dark place at a constant temperature.
