Vineyard and terroir
The Sangiovese grows on sandy, limestone-rich soils in the Chianti Classico region.
Vinification
The grapes are hand-picked at optimal ripeness and placed in small trays. Fermentation with natural yeasts and skin maceration take place in open 10 hl vats, chosen for optimal oxygen exposure. Pump-overs are done by hand.
Ageing
The wine ages for 14 months in large oak casks of 12 hl, 24 hl and 30 hl, followed by at least 1 year in bottle.
