About this wine
Vineyard and terroir
The fruit comes from Cantine San Giorgio’s vineyards in Salento.
Vinification
The grapes are harvested by hand and undergo cold maceration for 12–24 hours. Fermentation follows at 14–16 °C for 10–15 days.
Ageing
The wine rests briefly in stainless-steel tanks.
Label / history
The Cantine San Giorgio range takes its wine names from great thinkers and philosophers.
