About this wine

Vineyard and terroir

The Malvasia Nera fruit comes from Cantine San Giorgio’s vineyards in the province of Taranto.

Vinification

The grapes are harvested by hand, then crushed and pressed. The must macerates and ferments for 8–12 days at a controlled temperature of 22–26 °C.

Ageing

The wine rests for 8–12 months in 10 hl barrels.

Label / history

The Cantine San Giorgio range takes its names from notable thinkers and philosophers. Pausania refers to Pausanias the Periegete, an ancient Greek geographer and writer who authored the ten-volume Description of Greece.
